If you are making chocolate candies and your chocolate begins to thicken (from over-heating) while you are working, add a little solid shortening (Crisco) to thin it out. If you are done with your project and have leftover chocolate, be sure to use it up by making a quick bark (add rice krispies, nuts, etc.) and spreading it on parchment paper. Break it up after cooling. Once chocolate has been melted, it cannot be re-heated, so eat it up!!
